    This sub has given me so much over the years, I must give back!

    I work evenings and take dinners + a snack with me. Usually I prep 5 meals but happened to have some 4 day weeks due to holidays in Canada.Both meals freeze perfectly. I put 2 in the fridge, 3 go in the freezer and come out to thaw the night before work. Then i microwave. I try to keep things simple.

    Quiche – i thought this was a family recipe but turns out it’s [Julia Child’s basic quiche](https://www.foodandwine.com/recipes/quiche-lorraine), i use swiss cheese and add chopped onion cooked in the bacon fat. i do it in a store bought 9″ deep dish crust because I am lazy. QUICHE IS PERFECT FOR FREEZING.

    Roast veggies – Brussels sprouts and broccoli are cooked the same: cut sprouts in half and brocc into bite size pieces. Toss in olive oil and shake on some [onion/garlic/salt/pepper spice mix](https://www.amazon.ca/Club-House-Quality-Natural-Purpose/dp/B089M9YQPB). Arrange on a sheet pan covered in parchment paper, sprouts should be placed face down. Roast on convection @ 400 for 15min, check fore doneness, possibly add 5-10min depending on your preference. Broccoli should be flipped half way through, sprouts just stay down. Without convection it’s usually 35-40min.I like my sprouts well roasted as you can see. Caramelized and custardy on the inside.

    Pierogi – I use store bought frozen pierogi and cook a whole sheet pan of them in the oven for prep. They are tossed in vegetable oil and cooked @ 375 for about 16min. I take a small container of sour cream with me.

    Pulled pork – leftovers from a local BBQ joint. Pulled pork + pierogi are best friends

    Apples – I chop up a giant honeycrisp apple and soak it in water with 1 tablespoon of lime juice for a few minutes before draining, this keeps it from going brown for at least 3-4 days, i restock as needed through the week.

    raw snap peas & Babybel cheese – there is no recipe just buy them
