The first carbonara recipe was around 1944 or so and had cream in it. However I’m glad we no longer use it.

Cream in carbonara was largely used some time ago, before food became fancy. Important chefs have used it without esitation and it became popular in restaurants why it’s first easier to do, and second, why you have more time before for the serving the egg becomes dry losing all the creaminess. Modern carbonara can be better and I never will use cream in mine, but saying that you don’t have to use it, is absolutely wrong.
