I like to buy big packages of dates and keep them in the fridge as I eat them down. The starch gets converted to sugar from the cold, and they become impossibly sweet.

These dates I get off Amazon and are the best dates I’ve ever had. As the starch converts to sugar, it appear white and crystalline on the dates.
