Preheat Oven: 40°F/200°C 
Baking Time: 12-26 minutes (cooking time will depend on the thickness of your fish)

This Lemon-Butter Baked Cod recipe is incredibly easy to make and is oven-baked over a layer of fresh lemon slices and infused with lemon-butter mixture. It is deliciously good!  Serve it with rice and fresh vegetables.

Ingredients:

6 portions (750 g) Cod fillets 

For The Lemon-Butter Mixture:

1/4 softened unsalted butter, room temperature 
2 tablespoons grated Parmesan cheese 
1 tablespoon all-purpose flour 
4 garlic cloves, minced 
1/2 teaspoon chili pepper flakes 
1 teaspoon dried basil 
1 teaspoon onion powder 
1 teaspoon dijon mustard 
1/4 cup freshly squeezed lemon juice 
Salt, to taste 
Black pepper, to taste 

Lemon slices/wedges
Finely chopped parsley, optional to serve

Note: 1. When you have quite thick fillet pieces, bake it for around 
         18-20 minutes. Thinner fillets will be around 10-15 minutes.
          2. The internal temperature should reach 145F. Please check
         the fish with an instant-read thermometer to make sure
         you’re not eating undercooked fish.

Directions: 

1. Preheat oven to 400°F/200°C. 
2. Lay lemon slices in a rectangular baking dish. 
3. Pat dry cod fillets with a paper towel. 
4. Arrange fillets on top of lemon slices in baking dish. 
5. Season fillets with salt and pepper.
6. In a small bowl, whisk together butter, pepper flakes, parmesan cheese, flour, minced garlic, dried basil, onion powder, Dijon mustard, and lemon juice.
7. Top each fillet with a spoonful of the butter-lemon mixture. 
8. Bake in preheated oven at 400°F/200°C for 12-16 minutes. The exact baking time depends on the thickness of your fillet pieces. The fish is cooked when it becomes opaque and flakes easily with a fork. 
9. Sprinkle with chopped parsley to serve, if desired. Enjoy!🍣
