breakfast burritos let me show you how i do them this is the sausage breakfast burrito that i really like that’s super easy to make one pan no mess all you need is a little round of sausage probably about two servings now you flatten it out to be about the size of a burrito that’s probably about six or seven inches long just get it done and set it to the side now that your sausage is done you have some oil in here and that’ll be perfect for lubricating and seasoning some of these eggs now it’s like scrambled eggs but you don’t mix them in the bowl you mix them in the pan and right before they’re done you set them to the side you don’t want them overdone and they’re going to sit there for a minute so make sure that you when they’re still a little bit soupy you set it to the side so it continues to cook and then we’ll season it i’ve got salt pepper garlic onion powder chipotle and cayenne pepper in one bottle so that’s perfect it doesn’t take long at all and we’re going to season these cheese because you can’t have a breakfast burrito without cheese if you make a breakfast burrito without cheese you will anger st lucio and he is the patron saint of cheese making now you know something now you set some of these green chilies on here you can make it as spicy or as not spicy as you want look at a red one look at that then with one more acid we’re going to put some whoa almost dropped it that would have been cool put some valentinas on there get your flour tortilla a little wet just moist and throw it in here and that’s going to steam it it’s going to make it nice and pliable when you get ready to wrap your burrito so it doesn’t tear you only want about 20 to 30 seconds on each side otherwise you’ll end up steaming it out and getting it hard and this outer side is going to be the inside of the burrito so the outside is going to be nice and clean we’re going to need two hands so this is how we have our breakfast burrito looking so we can wrap it and it’s a burrito we’re not looking for perfection i’m going to go ahead and get it started we’re going to put it back on the grill thank you daryl for the idea we’re going to brown it up on both sides it’s going to add a little bit of crunch that’s going to be in juxtaposition of the soft chewy internals and it’s going to be absolutely delicious that’s what we’re looking for nice crunchy
