let’s make chicken over rice halad cart style and here’s the recipe for the spicy red rice that just goes crazy every single time the grain of rice does matter I’m going to be using this basti Cella rice continuously rinse the rice until the water runs clear and then soak the rice for about 30 minutes now in a pot we’re going to need a healthy amount of ghee once that melts I’m going to add hot pepper paste once that’s nice and fragrant I’m going to add paprika chicken buan and cumin and then our beautiful soaked Rice have cup of rice is double that in water once it starts to talk back drop it to a medium low and you’re going to keep it uncovered stirring every 5 minutes the rice is done when the water fully evaporates of course I’m going to be using some chicken thighs I want you to slice them down going to season this down with Paprika oregano garlic and some sazone and just a squeeze of lemon and a splash of oil into a hot pan then you could sort of chop it up like they do on the Halal carts I’ll be honest the rice is coming out really good but I still don’t feel like I’ve perfected it rice gets a mound of our chicken we got some shreders chopped tomato and of course you can’t forget the white sauce we got the perfect bite and as always now

  2. sella rice needs to soak for at least 2 hours and needs more water for cooking as compared to the regular basmati rice

  3. The key to perfect rice is: boil it till it's "almost" done. And then put it in the pan with all your spices and cook till it's perfect. That's how my desi mom cooks Biryani rice and it's PERFECT

  4. Some tips for perfect rice. Never do the 1:2 ratio…that’s too much water especially if the rice was already soaking in water. Do 1 and 2/3 cups of water instead. Also, turn the heat down to a simmer and cover the pot. If not the steam will just leave the pot and not cook the rice properly.
