Baby Bella mushrooms instead of snails, much better this way 🙂

    I never had escargot. What’s the filling? Did you do something special with the mushrooms? For some reason I imagine the snails to be salty?

    Vegan escargot recipe:

    Organic baby Bella mushrooms

    European style salted plant butter

    Fresh garlic

    Fresh parsley

    Chives/shallot

    Let butter soften. Pull the stems out of the mushrooms, and set aside. Finely mince garlic, chives, and mushrooms stems. Chop the parsley until it is dust. Mix all the mince into the butter. Spread a layer of butter mixture on the bottom of your baking dish. Stuff mushroom caps with butter mixture. Bake at 400 for 20-22 minutes or when edges of butter start to brown and mushrooms are tender.
