Hi! So I’m looking to make some good chewy gummy bears. The current gummy recipe I make requires 14oz of water, 3tbsp of gelatin, lemon juice, and this flavoring powder I have. I know that’s a lot of water but it’s how much I need to mix in with the powder and I honestly don’t want to swap the powder out for something else like jell-o or kool aid. The gummies come out pretty good though they resemble jell-o and not an actual gummy. So does anyone have any advice on what I can add or do to fix the texture without adding sugar or increasing calories by too much? It doesn’t have to be on the level of haribo but all the recipes I’ve tried have been basically jell-o. After some searching I came across this video: https://youtu.be/fLHqgX5UaJk?si=zAfSezYDEQJCO0f3 and in it he heats the sugar with water until it becomes thick to help with the texture. My question is, do you guys think it would be possible to achieve a somewhat similar result by heating up torani sugar free syrup? Honestly I’m pretty new to keto baking and cooking so I don’t know too much about substitutes. Any help would be appreciated😅
