    Looks great! What do you do to keep it from sticking?

    Do you ever grill them flesh side down? If so, what’s your technique for flipping?

    I cook these regularly and struggle with presentation when grilling large salmon filets direct over coals like this.

    Recently I found some mesh grilling mats that I like. Much better than the solid mats.
