hello everyone couscous is the one of the most traditional dishes in North Africa and is also very popular in many Middle Eastern countries this dish is made from Tiny steamed ball of smolina called couscous served with a meat and a vegetable sto it is versatile nutritious flavorful and balanced shared with family and friends on different occasions there are various types of CC in different countries depending on the ingredients and the spices used meat option often include lamb and chicken but a beef and a fish can also be used today we will prepare a typical Moroccan lamb couscous which is easy to make and Incredibly delicious we needed two steps to prepare this dish first we steamed the couscous and second we prepare the stew couscous can vary from very fine to large Pearl sized granules the texture influences how well it absorbs the flavors and the sauces today we will use the medium Gran couscous for our dish we will also need water and olive oil cinnamon powder is [Music] optional for the stew we need a lamb Chi cumin powder current powder turmeric ginger powder paprika salt and tomato sauce for the vegetables we need a diced onion garlic tomato chiek peas already soaked overnight or canned carrots bell pepper coriander turnips cabbage and a zucchini in a large pot heat the olive oil over medium heat add the chopped onions and the garlic and the sauté and two soften add the [Music] spices then the lamb jig and a brown them on all [Music] sides added the dce a tomato tomato sauce and a [Music] coriander then added a carrot cabbage turnips and a chickpeas finally add some water and a salt simmer over low heat for 1 to 1 and 1/2 hours we will add the zucchini and the bell peer later because they cook [Music] quickly now let’s let’s prepare the couscous I will prepare the couscous on a large plate drizzle with olive oil the salt is optional mix well to coat the couscous grain evenly gradually add water to the couscous a little at a time while fluffing it with your fingers continue adding water until the couscous is evenly moistened traditionally we use a couscous to cook this dish which has a large pot on the bottom for the stew and a steamer on the top for couscous if you don’t have a cuscus you can use a simple steamer to cook the couscous place the M couscous in the steamer spreading it out evenly and cook it over medium heat for about 20 minutes after 20 minutes take out the couscous and use a spatula or your hands to gently break out up any clumps and ensure the greens are separate I add some cinnamon which is optional then some olive oil and water mix well and steam for another 20 minutes take out the couscous again and repeat the process cook for another 20 minutes before serving don’t hesitate to taste it to ensure it’s well cooked [Music] now the lamb stew has been cooking for about 1 and 1 half hours added a zucchini and a bell pepper and I continue to cook for about 30 to 40 minutes over low [Music] heat now the lamb is tender and the vegetables and the couscous are well cooked let’s serve the dish [Music] arrange the cous cous in the middle of a serving dish drizzle the delicious stew sauce over the couscous to add flavor then add the Lamb on top followed by the vegetables and a cheekpiece finally garnish with a fresh corander the dish looks absolutely mouthwatering with vibrant color and inviting presentation let me try [Music] it wow the couscous greens are perfectly fluffed and the lamb is tender and succulent this Moroccan lamb couscous is a hearty and flavorful dish that’s perfect for sharing with family and friends serve it hot and enjoy thanks for watching and see you on our next World culinary Journey sh [Music]
