Big Joe III. Reverse seared with a little cherry wood to 100f. Rested to 110f. Grilled directly on grates in lowest position. I usually do soap stone sear, but this was good too. Came out a bit more cooked on the tenderloin side than I wanted, but still close to mid rare.

Finished with a butter/rosemary/garlic basting and "sauce".
