Tuck it in a cooler and take it with you on a family outing. Summer days are ahead of us and what better way to cool off than with a nice cold salad. It’s a light refreshing salad to have on hand. Ingredients:
1 lb chicken tenders or breast
Greek salad dressing
1 Tbsp olive oil
1 cup cherry tomatoes
1/4 cup kalamata olives
3–4 cups baby spinach
1/4 cup feta cheese crumbles
1 box veggie pasta

Directions:
Cut chicken into 1-inch cubes. Put into a zip top bag. Pour 1/2 cup Greek dressing into the bag and massage into the chicken. Set in the refrigerator for 2 hours to marinate. Remove from refrigerator 1/2 hour before cooking.
Heat oil in pan. Add chicken and cook until done, browning chicken. Temperature of chicken should be 165 degrees. Meanwhile, cook pasta per the package directions. Drain but do not rinse. Set aside.
While chicken is browning, add spinach to a large bowl. Cut tomatoes and olives in half. When the chicken is done, remove from pan and add to the bowl on top of the spinach. Toss in the tomatoes and olives. Add pasta to the bowl. Pour 1 cup of the Greek dressing, or enough to coat pasta and chicken, and stir well to combine. Crumble in Feta and toss lightly.

hey everybody this is Stephanie and Karen with food and family hello and today we are doing a cold pasta salad I’m making a Greek chicken pasta salad and I’ve already had my chicken I took chicken I took chicken tenders you can use a chicken breast cut it up um let it marinate I’ve got it in some store-bought Greek dressing and it’s been marinating about 2 hours the longer you let it marinade the longer the better it’s going to have flavor get that flavor seeped in it really good yep and so I’ve got this heated we’re going to put a little bit of olive oil in here and we’re just going to sauté the chicken ni about a tablespoon of oil and now we’re going to put our chicken in here and get it cooking and with it cut like this it won’t take long for that chicken to cook I got it will not take long that a little hot didn’t it yeah well it’s when that dressing hits that hot oil that smells fantastic we’re going to get some color on that chicken and this is about I think it was six or seven chicken tenders and I just cubed them up in about one in pieces you think that was about a pound maybe do what maybe a pound oh yeah about a pound that’s smelling good already that great dressing well you can make up your own it’s just olive oil lemon juice a little bit of apple cider vinegar salt pepper um some Parmesan cheese basil not basil oregano and you just want to get this brown and we’re going to get this cooked up and we will be back shortly all right we are back this chicken has gotten nice and brown what we go about 10 12 minutes I don’t know that we going wa that long maybe maybe 10 at the most it’s got good color on it yeah you just want to make sure your temperature is 165 on your chicken yes and so we’re going to put a little bit of spinach in the bottom of the bowl I love baby SP that way the chicken can Wilt it not much just a little bit and then you’re just going to put it right on top of it m okay oh my if y’all could smell this chicken oh my gosh that Greek seasoning she used oh there’s so many ways you can make macaroni salads oh yes I mean and there’s not a wrong way to do it no and during these hot months I mean it’s the perfect dish oh yeah let me get this hot pan away okay see the nice color on that chicken wow that looks good just in it if you could do that chicken on just a spinach salad yep and so now we’re going to take well that’s doing its thing we have got the Marzano the smaller Marzano tomatoes and we’re just going to quarter them like little B oh little baby [Music] Tomatoes you know this is going to be good you start getting these different colors in there and it just brightens that whole salad up doesn’t it and all these veggies and things like that just give it that fresh flavor especially on hot days like today and you know this macaroni salad the way you’re do it it’s healthier for you even though it’s pasta it’s going to be a good healthier dish for you you’ve got your spinach you’ve merely sauteed your chicken in any oil and these Tomatoes you won’t feel guilty about eating this no and it’s just a fresh something fresh to eat instead of like if you’re at the lake or this will sit well in a cooler if you’re at the lake um by the pool or just outside doing yard work it’s better than eating a sandwich yeah oh yeah look at there maybe a few more all right we’ve got just maybe a four of a cup of camela Olives I just love them you don’t have you can use whatever olives you want I just like these okay so you’re just using calamada olives I just love the flavor of them mhm and I’m just going to half these and throw in here so you’re just adding more flavor and goodness in that more prettiness if you just want black olives or green olives that’s it’s all to your preference and I mean you could add cucumber squash zucchini for this um oh yeah wouldn’t a good cucumber English cucumber be good in there or some zucchini cut up mhm M all right so we we’ve got that in there we’ve already cooked our pasta this is the tricolored veggie Pasta Pasta veggie pasta okay well that makes it a little healthier doesn’t it mhm okay so that warm noodles with that warm chicken is going to really W that spinach down now we’re going to give this a toss CU that spinach is already starting to Wi it is I almost forgot the most important thing I’ve got feta can’t forget the cheese can’t forget cheese I like Feta cheese I do too but would goat cheese be a good substitute if you didn’t like Feta mmz I I love both I’ve done this and I’ve used parmesan cheese oh that would hadn’t thought about parmesan I I like F but um I like goat cheese too I like goat cheese have you ever taken and I’ve done I it’s been a while since I’ve done this I got a log of goat cheese and got it really really really cold like in the freezer cold and then slice it dip it in egg whites breadcrumbs and friy just you serious to toast those breadcrumbs that would be good in this salad W have I never had this it’s been a long time time since I’ve made it that would I just thought about that of with that feta that would be good in this toast ran in this salad you’re making we’ll have to try that next all right and I’ve got the Greek dressing that I used to marinade the chicken yeahall know we’re we’re about easy you can make your own but we really like easy quick and easy we have things to do and now just give it a good TOS see this is one of those salads you don’t need um you don’t need any salt in it cuz you’ve got your olives you’ve got your cheese um my goodness gracious that that is beautiful Stephanie look you there y’all what a beautiful salad I am I am so ready yes ma’am oh just in that bowl that is come on and that smells phenomenal yes come on let’s just um you got to get the Tomato got to get a everything the perfect bite chicken the perfect bite oh honey Stephanie and as this cools and stays in the fridge all of that’s just going to marry together mhm M that’s so good I don’t know how much better you can get and any and you can if you don’t like something and you want to add something different that’s fine yeah all right we hope we hope you enjoy it yes we do I think this needs to go in our next   7. I marinated my chicken breast in Ken’s Greek dressing with fresh garlic, onion powder, garlic powder (yikes) and Italian seasoning. Let sit overnight bake and serve with rice. Yum

  10. You can also spread your crumbled goat cheese on a plate and freeze that covered for an hour. Eggwash it, bread it, and fry it for goat cheese croutons. So good! We are gonna make this on Sunday! Thx for the inspiration.

  14. Stephanie and Karen, I definitely know what I will make this weekend! It’s supposed to be a scorcher! I often make Greek salads in the summer months, but i don’t add pasta. I also chop half a red onion and a cucumber in mine. For my Greek dressing, I use olive oil, red wine vinegar, Parmesan cheese and a bit of honey, DELICIOUS!
