I had some flat iron steak leftovers and mushrooms which gave me an idea to make this. One has Swiss and the other aged provolone. Which do you prefer?

    I love the taste of mushrooms, so I would probably go with the provolone. I find it very mild and won’t take away from the mushroom taste. 

    I do love Swiss on some sandwiches! Need that little extra taste. 

    I would honestly just skip
    The cheese on this all together. It looks really good!

    I don’t like mushrooms, but I’d do a lazy Dianne sauce (marscapone, Dijon, W sauce) and probably Swiss. Caramelised onion for sure.
