The wife bought these ribs but they seem a bit small. How would you advise to cook them on the kamado without drying them out?

Don’t cook them for too long. 3/2/1 would be absolutely overkill. If it was me, I’d go for 1 hour, wrap or boat them for 1/2 an hour and see how you go. Do the tong test as you go – look and feel are far more important than temperature and time for small smokes like this.

When I do ribs in the Joe I do them about 275f 2 hr unwrapped, 1 hr wrapped, 0.5 hr unwrapped with sauce. They come out perfect

Have cooked these from sainsbury a few times. 4 hours 250-275 is plenty. Either no wrap and sauce for the last half hour or 2.5/1/0.5 (Unwrap, wrap, sauce)
