    – 1 whole head cauliflower roasted with olive oil, salt and pepper at 400 for 35-40 min

    – 1 onion roasted at 400 for 15-20 min

    – 1/2 c black quinoa cooked in veggie broth, then sautéed in olive oil with turmeric, cinnamon, salt, pepper, and 1/2c raisins

    – handful of chopped cilantro

    -1/4 c toasted almonds

    – 1/4-1/2 c roasted pistachios
