




…and I'll likely never be able to replicate it.
I mixed up around a cup of cornmeal, a little over a cup of flour, and maybe 3T of Tony's. I then mixed about 2T Greek yogurt and 1/3c or so of milk (since I didn't have buttermilk). I used fresh shrimp (lucky that there's a place that flies fresh seafood from the coast daily – quite the luxury in the midwest!) and coated in the flour, then milk, then back in the flour, and fried at 350° about 80 seconds/side. Off to drain, while I made some remoulade: 1/3c mayo, maybe 2T crystal, and a small spoonful of dill relish (I know that's sure to upset some folks, but I saw it somewhere awhile back, and it's pretty good – really simple!), toasted my fresh baguette (we have a great bakery in town) in some butter, slathered some of that remoulade on both halves, and topped with shredded lettuce, sliced tomato and piled the shrimp on there. As Guy Fieri would say: this thing was bananas!!
