I find myself with a lot more space to fill with hot sauce, maybe 10-14 more. What should I stock? Preferably Oregon local or something I can pick up from AleFire or the PDX hot sauce expo in August

The hot sauce sub and the sardine sub should host a joint party.

Your pantry looks just like mine, and after creeping on your profile I feel like we could be best friends when it comes to flavors. Only thing that stands out is the spaghetti o’s because I’ve never actually had those before but I’ve always wondered how they taste.

Sue Gee’s. It’s the house hot sauce for Cameo Cafe. I don’t live in Portland but last time I was there I had the pleasure of going to Cameo and I’m ANXIOUSLY awaiting when the Sue Gee website is live so I can order some of the sauce.

From my experience, the quality can best be maintained if you refrigerate after opening

Some of these should definitely be in the fridge.
