Join me in the kitchen today as I show you how to make Chocolate Cherry Cupcakes! This is a simple chocolate cupcake recipe with fresh chopped cherries added inside giving the cupcakes a juicy and fruity flavor. To top these cupcakes off, I made a whipped cream frosting with cherry extract! If you don’t have cherry extract, you could substitute with cherry liqueur to help give your frosting a nice hint of a cherry flavor.

hi everyone my name is Leah and welcome to the kitchen one thing about me is I really enjoy fruit especially baking with fruit so in today’s recipe I’m going to be using some cherries today we’re making chocolate cherry cupcakes let’s get [Music] started for this recipe you’ll need some flour sugar salt eggs cream cheese vanilla eggs extract vegetable oil heavy cream buttermilk cocoa powder baking powder baking soda some cherry extract powdered sugar and of course fresh cherries use a sturdy straw to remove the pits from a handful of cherries then chop the Deep hitted cherries into small pieces toy Bowl add 1 cup of flour a third cup of cocoa powder 1 tasp of baking powder 1 tasp of baking soda and 1/4 tasp of salt whisk the ingredients together to [Music] combine to a mixer Bowl add 1/2 cup of sugar and a/2 cup of vegetable oil a fix the paddle attachment and beat to cream the sugar and oil together next add 1 teaspoon of vanilla extract and two eggs mixing well between each egg [Music] [Applause] Edition alternate between adding the flour mixture and gradually pouring in 1/2 cup of Buttermilk going back and forth between each addition until everything is combined [Music] stop the mixer and scrape down the sides of the bowl to ensure no dry flour remains and mix again add one cup of diced cherries and mix to incorporate line a standard size muffin tin with 12 muffin cups fill each cup 2/3 of the way full being sure to evenly fill and distribute the batter amongst the [Music] cups you may have to fill two to three extra cups with some batter so you’re not overflowing the cups [Music] bake the chocolate cherry cupcakes in the oven at 350° f for 18 minutes and remove from the oven when a toothpick inserted in the center of the cupcake comes out clean allow the cupcakes to cool [Music] completely add 4 oz of softened cream cheese to a mixer Bowl followed by 1/2 cup of powdered sugar and a/ teaspoon of cherry extract beat to combine until the cream cheese is smooth and everything is [Music] incorporated scrape down the sides of the mixer Bowl as [Music] needed with the mixer running gradually pour in 3/4 of a cup of heavy whipping cream continue to beat until all the heavy cream is incorporated and the frosting has thickened and can hold a stiff peak you may need to switch the Whisk attachment in order to get the frosting thick enough transfer some of the whipped cream frosting to a clean plastic Ziploc bag cut a small corner from the back to create a [Music] hole carefully cover the cupcakes with some frosting forming a spiral from the outside to the center of the cupcake [Music] [Applause] [Music] thank you so much for joining me and making these chocolate cherry cupcakes that cherry extract in the frosting smells really nice and I can’t wait to enjoy one if you’re interested in my breast me for these chocolate cherry cupcakes you can click the link in the description box below to visit my website lean Noel cooking.com there you’ll find all my recipes written out photos videos and more if you like this video please be sure to give a big thumbs up and hit that subscribe button for more delicious recipes [Music]
