I’ve been experimenting with brisket flats since we have a smallish family and a flat is more than enough.
Today: 6lb choice brisket from Costco. Used MeatChurch Holy Cow. Injected with melted waygu tallow. Cooked at 225 for 4 hours with Lumberjack 100% hickory pellets. Added a smoke tube with a mix of hickory pellets and B&B hickory chips. Wrapped at 165 added more tallow. Pulled at 205 when the probe went in like butter. Super tender and juicy. Have a method to use in the future!
