I picked up some whole chilis with the idea to do something with them – but I actually don’t know what.

Usually when it comes to Ghost Peppers – I use the Trader Joe’s Grinder version and just grind some peppers on food.

For these though – do I mortal and pestil them? Or put them in their own grinder? Or rehydrate them and do something with them? Or use them as is in a recipe (and if so, suggestions for recipe!)

So, I’ll take any and all ideas to do something with them. Thanks!

Ghost chilis are hot as hell. If I came across these, I would rehydrate them and turn them into a roasted salsa, Make a homeade smokey BBQ sauce, Put one into a Chicken Tinga, Blend and strain one in with a Mole sauce to make chicken enchiladas, blend and strain one out to make a Nashville hot chicken sando.

In short, i’d use it like any other dried Chile. And find other dried chiles to tame the head like Ancho. Good Luck! and wear gloves!

I chop them up fine and use them in a marinade for anything from pork loin to chicken wings

Remove stems and put into blender or mixer to create a powder. Add carefully to any dish you want to add heat to.
