Found a GIANT sweet potato so decided to try and make a naturally sweetened chocolate pudding. Roasted two halves for about 40 min in a sealed tray, then scooped the flesh, a bit of soy milk, nutmeg, cinnamon, and dark cocoa powder into a bowl and whisked. Was great hot, but it's warm in the UK at the moment so froze half for ice cream. Really good!
