As title stated, first time making carnitas.

Camp Chef Woodwind Pro. I believe camp chef competition blend pellets and then some hickory wood in the smoke box.

I also made a Salsa Verde – I smoked the ingredients for 30 minutes before blending.

Smoked at 225 until stall at 150. Upped to 250 until 165. Put in pan with coke and orange juice, along with 2 slices of orange and some white onion, temp up to 350. About an hour later hit 205.

Did a rough chop with the knife, it was falling apart but I didn’t want that “pulled” texture I wanted the chop.

Threw in a cast iron skillet to crisp and made some excellent tacos.

10/10 will do it again, at $2.49/lb It’s an absolute steal. My wife was in love.

    I’m salivating. $2.49 is a steal. I never see that in Safeway, in a community with lots of hispanic presence. Three mexican groceries in a town of ~6,000. What should I look for?
