Grilled Meatloaf with Smoked Cream Cheese and Stuffing Mix
Ingredients:
Meatloaf:
- 1 1/3 pounds ground beef (or a mix of beef, pork, and veal)
- 1 cup Stove Top chicken stuffing mix (uncooked)
- 1/3 cup milk
- 1 large yellow onion (about 4 inches in diameter), finely chopped
- 2 cloves garlic, minced
- 1 large egg
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 2 teaspoons Dijon mustard
- 2/3 teaspoon salt
- 1/3 teaspoon black pepper
- 1/3 teaspoon smoked paprika
- 1/8 teaspoon cayenne pepper (optional)
- 4 ounces cream cheese, cut into thin slivers
Glaze:
- 1/3 cup ketchup
- 1 tablespoon brown sugar
- 1/2 tablespoon apple cider vinegar
- 1 teaspoon Worcestershire sauce
Instructions:
Preheat the Grill:
- Set up your green egg grill for indirect grilling. Preheat it to about 350°F (175°C).
Prepare the Meatloaf:
- In a large bowl, combine the Stove Top stuffing mix and milk. Let it soak for a few minutes until the stuffing mix is moistened.
- Add the ground meat, chopped onion, garlic, egg, ketchup, Worcestershire sauce, Dijon mustard, salt, black pepper, smoked paprika, and cayenne pepper to the stuffing mixture. Mix until well combined, but do not overmix.
Shape the Meatloaf:
- On a piece of aluminum foil or parchment paper, form half of the meat mixture into a loaf shape.
- Place slivers of cream cheese on top of the meatloaf base.
- Cover with the remaining meat mixture and shape into a cohesive loaf, ensuring the cream cheese is well enclosed.
Prepare the Glaze:
- In a small bowl, mix together the ketchup, brown sugar, apple cider vinegar, and Worcestershire sauce.
Grill the Meatloaf:
- Place the meatloaf on the grill over indirect heat. Close the lid and cook for about 45-60 minutes, or until the internal temperature reaches 160°F (71°C).
Glaze the Meatloaf:
- During the last 15-20 minutes of cooking, brush the meatloaf with the glaze. Apply additional layers of glaze as desired.
Rest and Serve:
- Once done, remove the meatloaf from the grill and let it rest for about 10 minutes before slicing. This helps retain the juices.
