Thank you everyone for the tips! I finally cracked a version I’m happy with:

Half a Banana (mashed) or around 48g
40ml Almond Milk (just to make it reach batter consistency)
50g MyProtein pancake mix (cookies and cream flavoured)
1 medium egg
6g baking powder
Tablespoon of sweetener (though you may not need this)

Mix this all together then fry as you would on low heat (pan should not be smoking), for 2mins each side.

Makes 6 pancakes – I used an ice cream scoop and did a scoop per pancake.

Top with whatever you want. Mine came out to 574 Calories with all these toppings and 59g protein.
