all you get is the L and the T oh robber the bee all right so today we’ve got tricks to show you how to get bacon in every bite the bee is back oh yes back in full effect and will you take a look at this gorgeous specimen and I don’t mean Daphne I mean the sandwich yes equally this is epic it is beautiful it’s an airfried bacon weave Square on a BLT stacked to the gods look at this huge best party platter I’ve ever seen in my life it’s it’s right that like it is delicious and it’s better for you because we put in the air fryer and I’m going to show you how it’s done all right very simple so you’ll have your strips of bacon here and you it’s just a weaving pattern it’s more a mind thing you just got to concentrate to make sure that you have your your pattern going so you lay out three strips vertically you’ll Place pull two back and you’ll place this one down here then you’ll go in raise up your Center Place Another strip in the middle and then bring this back and then bring these two up you kind of get where it’s going once you get the rhythm you’re fully in the game right and if you want to have it easier to pick it up I’d suggest maybe some parchment paper something kind of ease it into your Air fryer and it’s really quick and easy 10 minutes in the air fryer done done and you’ll just check it through out make sure you keep an eye on it just kind of flip it every few moments and then you’ll come out with come on girlfriend can we see how beautiful a bacon weave look at that start your day with a bacon tapestry there you go right it is beautiful you don’t need any bread you just take that right right there um is this your new favorite weave yes weaves in more ways than one yes what is it about bacon that everyone is so obsessed with like it never goes out of style no it’s the universal smell I think like everyone can identify it immediately and it has you sniffing and salivating like a little puppy and just mou drool it every time it’s true it’s like this salty fatty perfect com of delicious oh yes and the the fat and the salt goes a really long way my mom’s been vegetarian since she was 13 and she says the one thing she desperately misses there is no substitute for is bacon yeah but I think we should play a little game to find out all the things bacon goes perfectly with and we are going to call it 6° of making bacon wo sorry Kevin lovely such a good guy look at that you know this is fun cuz this is just a few of the many Perfect Pairings that bacon can be used for and you can use bacon to make any recipe better but here are some of the categories I love first up bacon makes Seafood better it definitely does I feel like it naturally enhances that mild fish and shellfish flavor it makes it Smoky it gives it that savory taste from the cured pork yes that salt and that fat goes a long way especially because Seafood tends to be pretty lean so getting that fattiness from the bacon really helps all right what else can we make bacon with we can make it with Apple um this like pork chops and applesauce obviously the classic but bacon and apples one other combo that I’ve really gotten into is a bacon apple pie you can actually use the the rendered Bacon fat in the pie crust get that flavor coming through two ways it is sinfully delicious and there’s that thing about the tartness of an apple the Crunch and tartness with that again salt and fat it’s just a match made in heaven right love that next time you bake one call me all right I know I’ll just send it your way for sure all how about some Maple absolutely that ooey gooey sticky sweet quality um gives bacon of course a new texture and it helps bacon stick to a pork loin you we could I know we’re doing those wrapped chicken breasts later in the show if we wanted to put some maple syrup on there would be kind of amazing this is my favorite way to enjoy salted pork product and yes it’s a little bit healthy color green classic yes again you’re taking something lean and light and giving it Smoky fatty salty deliciousness with bacon it it brings so much flavor it brings so much depth it makes something really healthy feel indulgent I absolutely love that combination all right this is an Elvis classic peanut butter I know you know people thought this sounded crazy but for me the idea of Elvis’s favorite sandwich fried peanut butter and banana sandwiches sounds delightful genius genius moves and if you are a sweet person sugar on your bacon why not bacon works well and baking and Gail you actually have a great way to prove just that remember that Cronut phase I mean we’re all still in it the Cronut was created and it took the World by storm H for many good reasons well there’s a baconi bonified version of it and people are kind of pigging out on it show it’s you we see this what here in New York the donut Hub oh ow has infused bacon into their version of the dessert it’s wild come on this is a hard attack I mean the amazing thing is that it’s bacon and maple you can smell both it kind of permeates the whole room in case you missed the Cronut phase I just need to tell you it’s these tiny layers that you find in a croissant okay paired with bacon paired with doughnut all right paired with delicious it changed the world whoever we will never be the same whoever did this like give them my number we need to be best friends what in the heck what in the what if my children knew I did this work this is work work this is a problem RNG I’m going to keep eating this when we come back it’s a bacon wrap dinner two ways stick around so good like something you saw on the show today we’re dishing all the details on the good list all the recipes important tips and tricks all in one place so stay tuned until the end of the show when we’ll share the good list QR code you can scan to send it all right to your [Music] phone what’s this bacon bacon do you love bacon what does mommy call you bacon shark bacon Shark E your bacon you want this one it’s my bacon okay mommy is shair that’s me and my daughter we love bacon and it’s what’s for dinner tonight we have oh wait bacon WRA dinners two ways starting with the bacon wrap dates that daffany whipped up last weekend with the dates open and my peanut butter nice and softened and easy to scoop I’m going to take about a teaspoon and just wedge it then grab your pecans and go ahead and Tuck those in you only need to use half a strip of bacon per date because you don’t want it overwrapping wrapping we want nice crisp bacon on the outside I do have these neat little skewers they will make it even easier to pick these up and pop them in your mouth once they are done the last piece of this puzzle to sprinkle a little salt on top into a 425° oven 15 minutes hear that music bacony goodness peanut butter with a little touch of salt on top that tender peon hiding inside and a sweet perfectly roasted date I mean talk about a little sweet fatty hit of deliciousness sometimes I even put a squirt of sriracha on top if you like a little sweet with your heat naughty naughty delicious it’s a multi hyen it piece of paper she’s extra she’s doing it all um but that’s not what’s for dinner tonight tonight we are having bacon wrapped chicken breast stuffed with cream spinach it’s your side inside your me it looks glorious and it smells phenomenal in here Jama dish the details on how this gorgeous dish is made absolutely and it starts with a little bit of soften cream cheese parmesan cheese going in delightful this is the fastest way you could ever make cream spinach right we have some frozen spinach thawed out and you squeeze out a little bit that moisture there we also have a little lemon zest keep it fresh yes that nice brightness that you really want to some scallions yum thinly sliced a little bit of nutmeg I find that nutmeg and spinach it’s just it’s that inquisitive little bite like what is that keep them guessing right and then we’re going to our chicken breast all right so we have it already um cut and we’re just have a little Mallet you can cover it with plastic WP and don’t take out your aner issues on it you can just I like to do a little beat just nice and flat get a little seasoning mix here got a little onion powder little Cayenne paprika and then we’ll put our filling in don’t want on every layer yes so flavor upon flavor upon flavor that’s what you want to go for we’ll get a little bit straight down the middle and you just do a nice little roll and tuck roll and Tuck all right so then we have our little roll and Tuck and here comes the bacon and just for you my dear this is maple bacon a little hint of sweetness going in so once you roll your chicken around tuck all the seam sides down and you you put your strip of bacon right around there cover it all the way through just like we have here beautiful and you just finish it off with a little bit more of that seasoning mix on top once you get all your bacon so you have beautiful seasoning and flavors all throughout you will pop these Beauties in the oven and you’re just going to bake for about 30 35 minutes till all that cheese is nice and creamy and bubbly and gooey and the spinach is cooked and everything and you start to get excited because you can smell it dinner is ready and oh Jama oh my goodness now who would not want to come home to this for dinner wow smells so good and you can even put it on the broiler for a few more moments down here let’s go you want to go down here sure yes you can even go in under the broiler kind of crisp things up a little bit I’m going to put that under there cuz it’s hot all right it has this beautiful presentation lovely spinach on the inside it is wafting from bacon yes I’m like really get in there I’m getting in there do we really need the pork I don’t think so oh okay we’re going we’re going to it right there I mean it’s it really has all the things and the best part about it and I haven’t even tasted it yet is that a chicken breast can be dry as we know and wrapping it in bacon seals in that moisture gives it a little extra needed fat to make it all come together and flavor well I have tasted it and I have to say that nutmeg really went a long way that lemon so good gorgeous don’t ever tell them what it is I can’t I’m yeah this is mine I can’t wait to finish this up when we come back we’re playing spin the bottle with garlic and no just kidding not that kind of spin the bottle you’ll see I mean I’m open to whatever first show really practice practice get it in there all right now remember the days when you and your friends would sit in that Circle and anxiously wait to see if the bottle Point towards you oh gosh memories okay so today we’re putting the dish Twist on that classic game spin the bottle but before we can spin please welcome today’s guest host and MC funny man Brian Bazar how’s it going to the Velvet jacket looking good okay okay so this is not the classic game the kissing game that you’re used to this is not the dish after dark this is about spinning the bottle for information about you I want to know all about you and see how well you know each other okay fun this wheel every space on this wheel contains a category and I’m the only one who knows what’s on the category so I’m going to spin the wheel if you can answer the question about yourself you’ll get a pour okay that’s easy you can pour yourself a little champagne go easy we’re good at that right okay if you can answer a question about one of your co-hosts if you can answer that you get a bonus P okay so the person with the most champagne at the end is the winner aren’t we always the one today the most champagne wins always right and today we’re getting a little extra help from the good dish dancers oh I’m sorry I couldn’t get them approv no dancers today next time okay ready for the first pin defie you’re going to be up first okay all right I’m getting impatient okay post with the most the question is what do you hoard and if you’re not a hoarder what do you buy a lot of uh what what do I buy a lot of I buy a lot of ketchup I buy like an endless supply of ketchup it’s weird I know now if you’re at a restaurant do do you hoard the packet no that’d be so weird no that’s that’s that’s weird that’s where you draw the line here at the good day I’m pouring myself do you know what either of the other two ladies hoard gaale Hoards um uh Capers she’s not totally wrong okay give yourself give yourself a little extra and Jama hord’s um honey cuz she’s sweet is that true do you hoard honey though no is that true she just wants support yeah okay we’re going to leave it at that let me just say I was hoping I was hoping you’d say you hoard shoes cuz we were the same size I was really hoping you but I didn’t know we could go into the closet you you can go anywhere coming out of the closet going into the closet what are we doing anywhere in the closet out of the closet all right Gail you’re up we’re going to see what the question is come on nervous haters going to Plate the question is what do you not like to eat but you make it because other people like it oh I mean that’s easy there there are two things really but the biggest one is black beans black beans yes it’s I mean it is irrational it is you know PE you have a food Association I got sick twice in my life when I was younger and the last thing I had eaten whether it was connected or not was black beans and I have a negative association pour yourself a little just giving herself an extra point we haven’t gotten a me yet I’m this champagne you’re up next okay are we all to drink as well why not I’m just checking okay oh Brian’s Choice okay I’m GNA make it uh love it or peeve it what’s your biggest pet peeve oh about people or anything goes all right piggest biggest pet peeve people when you all of them people in general when you say you’re going to do something and then you don’t do it like I didn’t even ask you and you volunteered like oh yeah I’ll take care of that for you and then you don’t come through rude oh gosh don’t do that to me you never exist to me after that like yeah that you think you know any of their pet peeves do you think you know Gail or Daphne’s pet peeves uh daffy’s pet peeve I don’t know if this is it but I know as a mama bear like don’t come for her babies who’s coming for my babies you want to say anything off cuff about these children she will have you done like that’s her and then then they’ll get you afterward yes it will B hey I’ll drink to that chair all the way all right now I’m really going to take control with a special bonus round find out which category I’m having the ladies dish on next get those dancers out here get the dancers [Music] dancer we’ve been drinking throughout the break all right we are back for the final round of spin the bottle with our guest host Brian Bazar all right Brian what is our final category okay it is Brian’s choice and for this bonus round I’m having you dish on the foods that Define you let’s see what’s on the menu up on this wall behind you are six dishes I asked each one of you to pick a food that defined you in in other words one that created a lasting impression or help shape the cook you are today okay so I want to see how well you know your co-hosts Gail you’re first so Daphne what food on that wall do you think was a formative food for Gail here’s my deductive reasoning mhm okay avocado toast wasn’t a thing until like 5 years ago oh okay so right out of the gates I’m ruling her out all right um apple pie I could see because Gail is like a sneaky Baker she’s got a lot of tricks up her sleeve in the sweet category so I want to go there but at the end of the day I’m going Caesar salad with rustically torn croutons because something tells me that Gail was like nooks and crannies give me more crunch I love this tell me tell me tell me what’s the answer rustically torn crew okay J what do you think the answer is I want to say the artichoke all right Gale what’s the answer well it could have been the artichoke because we I definitely have a lot of memories of eating artichokes as children my brother especially was obsessed with artichokes but that’s not what it is okay but it’s the zucchini no come onini tell us about the formative Zu Crystal Clear when I needed to answer this question I did not hesitate for a second in fact I wrote about this in my book because it is such a defining food in my life in my childhood and I swear this is a true story growing up my mother was an incredible cook and whenever kids would come to our house she always made zucchini which as you can imagine when you’re like six is horrifying because I want one my friends to come over to think I’m cool and want to come back and you don’t want your mom serving zucchini it’s so embarrassing always zucchini so she used to tell this story to my friends and my brother’s friends growing up and in retrospect like I’m honest ly horrified and she might be horrified that I’m telling the story on National Television but it’s true and I can laugh about it now sort of she would tell my friends that actually when they would you know refuse the zucchini she would say well you know we used to have a fourth child in this family but they passed away from zucchini itis because I forced them to eat so much zucchini I swear to you she would tell like 12-year-old boys this and of course she would get calls from my friend’s parents being like my child came home and told me the story and so sorry I swear to you and like we would just we would just be horrified that my mom would do that but interestingly I have come to truly love zucchinis and now you will always find one in my fridge I wonder what she thinks of zoodles does she support zoodles yes she does for sure good yeah all right Jama support important questions we need to answer okay Jama you’re next daffany what do you think is the food that defines well my deductive reasoning did a whole lot of nothing last it’s a tossup between the shrimp and that apple pie which is calling my name um she’s Southern sweet Jamaican heat I don’t know what does that say to me I think that says shrimp I think it says shrimp okay she says shrimp Gail what do you think it is well it’s interesting cuz I was also going for apple pie so I’m going to choose apple pie we got to get it one way come on I feel like this could be a tiebreaker moment okay you tell me ready the answer is the shrimp pour it out pour it out let me tell you Moroccan spice shrimp to be exact Moroccan spice that is the dish I will never forget it because starting out in my career now I was in Corporate America did the whole thing corporate business suit all of that left that all behind to pursue my passion in food and I started out in catering and was really just trying to work my way through and I booked the gig for an award show in Atlanta and it was like all the hip-hop artists you can imagine and I was asked to cook for them in the lounge and it was my Moroccan spice shrimp that was like the everybody was buzzing around the room like and I’m looking around and every hip hop artist is eating this and this huge Entourage comes in and I hear Snoop dogs in the house right and I can’t even see him it’s just he’s surrounded by all of these people and all he’s like 65 isn’t he but it was like he’s he’s covered with people and but I knew it was him cuz it smelled like weed when we walked like I was like yeah Snoop Dog is in the building right and then yes and of his Entourage everybody sworn my buffet and it was like all the food was gone and they were just like I’m like I fed the happiest hip-hop High artist in the world like that was the night for me and I sealed it and I was like if I can do that I can do anything like that is what solidified my career as a chef like I could do anything in the food world so yes so tomorrow night on the good dish what’s for dinner Moroccan spice shrimp I got to have those Snoop Dog come by like I I have more shrimp this time so I will definitely feed the entire underage this time Che there we go I’ll drink to that okay yes drink to that we want to find out what your defining food is so Gail what do you think it is okay so I was before you chose mine I was going to say Caesar salad because I know you have a family Caesar salad Ree that I am now obsessed with because you taught it to me I love that so I was going to say that but then you chose it for me so I’m going to go artichoke because I know your family grew up in the Mediterranean you have you know that’s you know where your ancestry is from and I feel like it just feels bright and Mediterranean so I say artichoke okay okay all right J I say avocado toast because nobody said it and just moving this game along so avocado toast let’s go okay D what’s the answer H the big answer of the defining dish for Daphne Oz is the artichoke very nice I got to top you off okay always that guy there we go the story yeah let me tell you about this arti choke so funnily enough this specific Arch choke that we see here is my grandfather’s Italian stuffed artichoke it is roasted to Perfection it is what he makes every single Christmas for our huge family my mom’s 106 I’m 104 it’s like 30 plus people every time we get together for a holiday meal and this recipe is I think taught me a lot about how to make healthful food like obviously this is primarily a vegetable but make it feel indul and decent and celebratory have it be something people can’t wait to get around the table to eat this is stuffed with Italian breadcrumbs pearo cheese chopped up stems of the steamed artichokes roasted to Golden Brown Perfection slather olive oil all over our top and to see The Joy on my grandpa’s face when he puts it down in front of all of us and we just go to town on these gorgeous vegetable gems is it it is that confidence it is that joy that I try to bring into the kitchen whenever I get in there so 200% you guys all kind the same amount I think I’m the real winner but I want to raise a glass and a toast to all this good dish we have to look forward to and thank you for having me here many morees to come Cheers Cheers Cheers che che cheers thank you to Brian for bringing the booze having fun with us getting to know our favorite dishes the ones that defined us and coming up have you ever wondered what the best way to make bacon is I know you have when we return we are heading to the Test Kitchen I’ll meet you there [Music] H the good dish Test Kitchen where we get a little nerdy about testing recipes so you don’t have to and today the good dish Test Kitchen explores the best way for making bacon bacon bacon and more bacon bacon made on a stove top as we all know probably can be crispy and delicious and it’s Sizzle could win a Grammy but let’s face it when you make it on the stove top even though you can’t deny the flavor and that smell that permeates your whole home it makes a mess it’s sputters all over your kitchen all over your stove it may not be the best way to make bacon and you know and that’s I honestly when we put things in the Test Kitchen we’re really trying to get to the bottom of every option is a good one bacon anyway is a good one but what is the best way to make it and which method can you use to cook it that is actually going to always yield great results it turns out the cooking method of your bacon can be quite controversial it’s dividing families I’m told so we’re dealing with Ops big issues here so today we’re experimenting with three different methods for cooking bacon some of them might be a bit unconventional yeah I think so in the microwave a brand new oven method where you twist the bacon and on the stove top but with a little water yes adding water okay let’s begin with the microwave this method is fast clean up is minimal that’s why I like it here’s what you do you line a microwave safe plate with some paper towel you put a few strips of bacon down cover it with the paper towel right here on top in the microwave on High 3 to 5 minutes you want it crispy you want to check it halfway through sort of like when you cook chocolate you want to do it in increments to make sure that you don’t go too far because every microwave is slightly different and our beautiful results out here’s the thing oh here she is so let’s talk about the results here obviously it was easy we thought putting it into the microwave but the reality is the microwave baking comes out flat it looks lovely eye to eye here but it and it definitely does seem like the easiest but I would argue because you have to go back and and sort of check on it and and look at it like you described because the difference between perfectly cooked and burned is literally seconds it does make it a little bit more chall alling it doesn’t seem like you can do all that much at once and as you can see here they’re actually not uniformly cooked you have some pieces that are a little bit raw some pieces that are a little bit burnt it gives it that dried out texture that to me is not the perfect piece of not perfect sorry microwave but it’s not perfect the next method for cooking bacon is a new trend twisted and baked in the oven it is taking Tick Tock by storm let’s have a look I have over 2 lbs of bacon here going on a lined baking sheet with parchment paper make sure you trim the edges unlike me and then I put it in the oven at 350° for about 20 minutes flipped it over put it in for another 20 minutes it turned out perfect so you saw what they did there they Twisted the bacon put it into the oven like this and it comes out kind of fun it looks pretty evenly cooked the thing about making it when we tried it though in the test kitchen is that it kind of became messy to make it was hard to flip she wants you to flip it halfway through and it it kind of actually becomes a bit of an arduous task I I feel like there’s some Christmas crispness but it’s inconsistent and also there’s sort of some Pockets where there is some extra fat pooling kind of good but also not exactly what I was looking for not that Christmas were Desiring okay our final cooking method and this is interesting cuz there’s a little chemistry Happening Here is to cook your bacon in a skillet with a little bit of water so you want to place the into a cold pan and you’re going to space them evenly here non-stick skillet here and we’re going to add just enough water to coat the surface of our pan and ever so slightly submerge the bacon not by much I mean we’re literally just taking it up to the bare minimum of the edge here you’re going to turn that heat up and get it to a simmer and as the water comes up to that boil to that simmer it actually helps the fat to slowly render so you get a beautifully even cook on your bacon and you and after the water has completely evaporated what you then do is let the bacon continue to cook over a lower heat so you turn it down to a medium roughly it’ll take about 7 minutes and the bacon will perfectly crisp and brown it stays lovely and even and flat which makes it really easy for using in sandwiches and things like that this is the result you end up with I will give you one word of warning from experience sometimes at this stage in the cook process it sputters a little bit so just go ahead and like vent your pan with a lid like that like so but look at this gorgeous evenly cooked tender crispy piece of bacon let’s hair a little crunch pliable not too crispy the science to support it of course is once the water boils it renders the Bacon Fat slowly this does help prevent the bacon from burning and the method to the madness is that lowering the heat halfway through the process actually gives bacon an even crispness and prevents shriveling that’s one thing I noticed hor Chang it shape mhm delicious okay so let’s see it side by side here we go I have the big reveal okay great side by side here is our our professional results we have the microwave version Twisted in the oven and then we have the stove top in water and I will say pretty much by a landslide the best way for making bacon is stove top in water who knew delicious really good all right when we come back we’re going to show you what Meal Time looks like in our homes really stay with us [Music] we’re back with the good dish this is our kitchen and we love sharing meals with you here we might be trained chefs but we’re hard work and they understand the process of cooking so that’s why they’re the best eaters in the world this this part of the day is always a little chaotic but it’s also a great moment for everyone to be together talk about our day and enjoy each other’s company cheers I love I mean that was fun I I have to say I love the fact that breakfast in your house really felt like a party yes it should be it pancakes hello got making a party um yeah no you know I do it makes me so happy it’s not every day that my kids want to get in the kitchen and help sometimes I do they it it’s so beautiful though when they do they get in there and they have fun and they know it’s okay to like make a mess and sometimes it goes a little Ry sometimes mommy forgets the pancakes are around they burn and we have to wait for another batch like it’s it actually it reminds me so much of how I grew up that love that was always present in the kitchen and seeing my mom cook and and having that sort of like intuitive feeling about food and and not being afraid of your food that’s all I ever care people ask me about picky eaters all the time and look kids are themselves some some of them come out not really liking a ton of different foods but the best thing I’ve ever been able to do for my kids is lead by example have them have fun in the kitchen with me want to be in there with me um make a lot of cookies and and cakes and things that always tempts them in there but also to make them feel like not being afraid of food is a big kid thing to do that that that like choice that they have and that fun that they can have is a is a very um it’s it’s just it’s something that they can show how adult they are it’s very empowering you always keep your cool in the kitchen I do not always keep my cool in the kitchen they edited like chaotic they’re so loud and there’s flower like you it’s just like you still are in control of everything which is I what I admire about you thank you now you know I have to tell you Sasha and I are in the same wavelength does she eat pasta every day for lunch every spaghetti specific spaghetti specifically so I’m like I don’t even have to ask what are we eating spaghetti every day and but she she won’t break that I mean it’s convenient for me I just make pounds of spaghetti I do love spaghetti if I had to CH I mean she’s picky and I just I got to love her for that I’m like your mother is a chef you know I could dabble and do a few things but it’s like spaghetti I’m good she want to be easy and then now you ma’am you’re little mini me chaos I mean being yeah for sure we all can pick up on each other’s cues and just like I love the way you all are in the kitchen well I mean yes there is no denying that she is mine we’re not sure if she’s my husband’s but we know she’s mine no DNA testing they both are ours for sure through and through but it’s funny we play this game and she did it perfectly when we were making dinner um where sometimes to sort of just like tease each other we try to finish each other’s sentences and she’s really good at like just going right into what I’m going to say and picking it right up I think it’s like hilarious isn’t eight kind of a fun age filamina my oldest is seven eight in February and it’s like they’re little adults they’re their little companion they’re always there and they’re you can play games with them and they at every age they shock you they really just like blow your mind with what they come out with but um they get the joke but they get the joke exactly it’s the humor that really I I love it
