**Sardines and Tomato Sandwich; Expanding the repertory**
Heavy harvest now for the last two or three weeks, enjoying the daily tomato feast. Time to reach beyond the glorious BLT. Classics are a classic for a reason, and nothing will ever replace them. But sardines and tomatoes on a piece of toasted baguette make for a pleasant change of pace. I garnished them with thin slices of garden shallot this morning; ate them “open face,” using a “build as you go” approach.
Do you have other personal favorite tomato sandwiches? Suggestions for expanding my repertory please. Thanks!

The sardines were packed in mustard sauce.

Sounds good. I like sardines and generally have a few cans in the pantry. Sardines aren’t something I eat a ton of, though. Once in a while they hit the spot. I could see where a tomato slice would work well with those.
Grilled cheese sandwiches with tomato slices are pretty tasty. Open faced ones in the oven is one way to do that. Slice of bread, slice of your favorite cheese, slice of tomato, sprinkle tomato with dried oregano if desired. A few moments under a broiler can get some toasty flavor in there if you like.
Or do the grilled cheese in a skillet with melted butter on the bread(I put in a pat of butter in the hot skillet and put the bread slice on that) and brown the bread slowly enough to allow the cheese to melt. Tomato slice in the middle.
I like tuna, chicken or egg salad sandwiches with a slice of tomato on them and on the side
Cucumbers and tomatoes work well together.
I like smoked salmon with tomato slices. Scrambled eggs and poached eggs with tomatoes on the side are yummy. Sliced tomatoes are good breakfast food, especially if bacon is in the mix.
Any hamburger, steak, about any sandwich I have, in season, I will put a slice of tomato either on the sandwich or on the side or both. I pretty much eat as many tomatoes as I can stand when in season. Still, even with that, it’s hard for one or two people to put a dent in the supply during the peak of the season if you have more than a couple of productive plants.
