This bad boy has 40g of protein and is only 344 cals! I like to change up the flavors of mine but have been liking this tomato basil one lately.

Ingredients:
– Cooking spray
– 1 tomato, diced
– 1 handful spinach
– 1 c liquid egg whites
– Basil, to taste
– 1 slice vegan cheese, diced or low fat cheese of choice (I like Follow Your Heart smoked gouda for a dairy free option)
– 2 slices deli turkey, diced
– garlic salt and pepper
– 1 low carb tortilla (I use the Xtreme Wellness low carb tortillas or the Mission Carb Balance)

Directions:
– Heat a large nonstick skillet over medium heat. Spray with cooking spray.
– Add diced tomato and let it cook down until some liquid is evaporated.
– Add spinach, cook until wilted.
– Add basil.
– Add egg whites, cheese and turkey, garlic salt and pepper, and place a tortilla on top of everything.
– The egg whites etc will continue to cook and will stick to the bottom of the tortilla so all you have to do when it’s done (5 minutes or less usually) is get a spatula under it all, fold it over and slice it into triangles.
