This is day 14 of 30 days of family dinners on a budget. When it comes to the end of the day I’m usually quite tired and the last thing I feel like doing is prepping and cooking dinner… and I think many of us feel the same way. It’s easy to fall into a funk and maybe reach for convenient options more than what we would like which can be expensive. This pumpkin soup takes no time to prepare… You don’t need to cut the pumpkin! And that alone is enough for me to love it! 😂

My kids love this, it is a few dollars a serve and you can make it when you have the time (and energy!) and then freeze it for when you really need it.
