Ingredients:
Egg whites: 2
Sugar: 45g
Almond flour: 26g
Cake flour: 26g
Baking powder: 1g
Butter: 50g
Dried cranberries
Sliced almonds
Method:
1、Heat the butter over low heat until it turns golden brown (with a nutty aroma). Let it cool slightly, then sift out any impurities.
2、Whisk together egg whites and sugar until the mixture forms coarse bubbles and the sugar granules dissolve, using a double boiler if necessary.
3、Sift in the flours and baking powder, stirring until well combined.
4、Gradually add the browned butter, stirring until evenly incorporated.
5、Chill the batter for one hour. Transfer the chilled batter into a piping bag and pipe it into molds. Sprinkle dried cranberries and sliced almonds on top.
6、Place the molds on the middle rack of the oven and bake at 180°C (356°F) for 10 minutes, using both top and bottom heat.
Tips:
Refrigerating the cake overnight enhances its flavor and texture. Store the cake in the refrigerator for up to 1 week.
