your oven to 375° F 190° C cook your quinoa brown rice according to the instructions on the package while that’s cooking chop off the tops of the bell peppers and remove the seeds heat olive oil in a skillet over medium heat add onions and garlic and saute until the onions are translucent add in your chopped veggies black beans diced tomatoes cooked quinoa brown rice spices salt and pepper stir everything together and let it cook for about 5 minutes spoon the vegetable and quinoa brown rice mixture into the bell peppers put put the stuffed bell peppers on a baking tray and bake for about 25 30 minutes if you’re using cheese sprinkle it on top of each bell pepper about 5 minutes before they’re done baking allow the peppers to cool before you dig in this dish not only incorporates fiber rich vegetables but also includes quinoa or brown rice for added fiber plus it’s versatile so feel free to adjust the recipe to suit your taste enjoy your cooking [Music]
