i like to make a batch of convenience meals to keep in the fridge or to send with my partner to work about once or twice a week. not only do i like to feed us healthy food but food that is exciting/appealing to eat.
top row: yogurt marinated chicken, jammy eggs, spaghetti squash, pickled red onion, roasted bell peppers, goat cheese
bottom row: butter lettuce, fresh dill, pan seared chicken thighs, roasted golden beets, goat cheese, vinaigrette
side: same yogurt chicken & egg + some leftover roasted carrots and marinated kale—a special one i’m reserving for myself because the kale is my favorite!
i try to make all of my dressings, condiments, and garnishes in house 🙂 i wouldn’t say we have a specific way of eating—just food made with great, unprocessed ingredients that i feel very privileged to use.

What a credit to you. Looks so yummy. I don’t have any imagination when it comes to cooking, I so wish I did. Would you mind sharing how you cooked the chicken etc ? What are jammy eggs ?
