I'm making Kenji's Peruvian-Style Chicken tomorrow. For people that have made it before, how long did you marinade it? Overnight, a couple hours, or did you just rub it on and start cooking?

    No need to leave it on for long in my experience. I usually just make the green sauce, get the rub on the chicken, and let it sit while I get the grill ready.
