Went on vacation for a week and came back to my only bell pepper having a soft spot. Is this something I should trim asap?

Looks like blossom end rot. Caused by calcium deficiency, usually due to inconsistent watering. That one is bad, pluck it and chuck it. Might want to try supplementing with some Cal-Mag.
