3 lbs of chuck. Trim, season all over with Holy Gospel, smoke at 250 until 170 internal. Place in a foil tray with a cup of beef broth, cover with foil then take it to 205 internal. Remove and cool for 30 mins, cube it and sauce it, add back to the smoker for 45 mins uncovered.
