Salads: spring mix salad, micro greens, red onion, goat cheese, marinated and baked chicken breasts, walnuts, reduced sugar craisins. Thin sliced multigrain bread and a guacamole cup.

Burrito dinners: slow cooked chicken breasts with chile verde enchilada sauce, chopped white onion and poblano peppers, minced garlic, salt and pepper. Seperate and shred cooked chicken, mix with fat free cheddar and fat free refried beans. Stuff into carb balance wheat tortillas. Top with sauce from the slow cooker and reduced fat Mexican blend cheeses. Toss chopped cauliflower, zucchini, mushrooms and garlic in olive oil, chipotle, salt and pepper, then bake.
