Serves 4
Ingredients:
1.5 lbs Baby Dutch Potatoes
6oz feta
5 oz unsweetened greek yogurt
3 tbsp olive oil
1 jalapeño
5 leaves basil
1/8 cup fresh parsley
1/4 cup hot honey
3/4 tsp minced garlic
1/4 tsp crushed red pepper
1/4 tsp salt
1/8 tsp Italian Seasoning

Directions:
1. Cut your potatoes into quarters. Boil for 12 minutes until they start to soften. Let cool. Preheat the oven to 425 degrees Fahrenheit.
2. In a bowl, combine the olive oil, crushed red pepper, Italian seasoning, salt, 1/4 tsp garlic and parsley. Mix well.
3. Coat the boiled potatoes in the oil mix. Place in the oven for 35 minutes, tossing 2-3 times while cooking to ensure they don’t stick to the pan.
4. Cut the jalapeños into smaller pieces and sauté for 5 minutes or until soft.
5. While the potatoes are in the oven, combine the feta, green yogurt, garlic, basil, and sautéed jalapeños in a blender. Blend until smooth.
6. Place the whipped feta on a place, top with the potatoes, and drizzle with hot honey! Enjoy!
