I'm trying to smoke ribs at 250 but the main thermometer reads much hotter than where the ribs are actually resting.
Probe one is on the far right side next to ribs, probe two is left side of ribs closer to the thermometer.
I had it set to 250 but cooking area seemed to be 210 and 190

Found this thread with the same question and good answers. Think I’m using the meat probes incorrectly and I’ll drop the temp back down and go off the main and not stress
I would go off the probe temps and set the main temp to what it reads when the probe temps are at your desired temperature. So with this displayed readings, if I wanted to smoke at 250F, I’d set it for 300. Ideally, you’d want an accurate main thermometer but this method gets you cooking right and not too low. My Pit Boss did this and it worked well until they sent me a new controller on warranty.
Temp is temp. The thermometers don’t care if they are reading meat or air temp. Meat probes are accurate reading the air temp despite what others will tell you.
Obvious misstep. Should be named Grill-ermo. Fix that first
Try a new RTD probe and see if that is more in line with the meat probes.
