As promised, here's another meal prep recipe- Shrimp fried quinoa.
My partner and I are athletes and prep for high protein, whole grains, and lots of micronutrients.
We're also flavor heads so this stuff tastes BOMB- kinda like rice a roti, but without all the crap. Recipe in photos.
We buy the soy sauce, sesame oil, and quinoa in bulk, and shrimp is from Costco.
We did the math one time and I think it came out to around 2 dollars a meal.
It's low calorie so can be used as a satisfyung snack too (my partner needs more calories than I do, and supplements this one).
There may be a bit more low sodium soy sauce in here- add to taste. We make 10 servings at a time, and cooked the quinoa in the instapot a few days before (it takes 10 minutes- 2 min cook, 8 min sit)
I squeeze limes over it before freezing.
