I fell in love with FINOCCHIONA SALAMI when I lived in Italy, it was absolutely sublime. I read dozens of recipes, and settled on this one:

Did you use fresh fennel or dry? Did you use the starter culture mentioned? Was the temperature stable and in the right range during curing?
