I love a good slow cooker meal and this Slow cooked Chicken and rice with vegetables is perfect for a week dinner. The chicken and rice are well seasoned and full of flavor.

INGREDIENTS
2 cups rice
2 cups frozen vegetables
2 cups chicken broth
1 Tbs soy sauce
Salt to taste
4 bone in skin on chicken thighs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
1/2 teaspoon dried thyme
salt and pepper to taste
olive oil
1 medium onion, sliced
3 cloves garlic, minced
Brief Instruction
* Pour rice into slow cooker
* Add frozen veggies, chicken broth, soy sauce and salt, mix together then set aside.
* Mix all spices together then season both sides of chicken of chicken thighs.
* Heat oil in pan on medium high heat, then sear chicken 2 – 3 minutes on both sides.
* Add Seared chicken to slow cooker
* Saute minced onions in the pan until caramelized.
*Add minced garlic to onions and saute for 30 seconds to get flavorful.
*Add Sauted onions and garlic to the slow cooker.
*Cover and Slow cook on high for 4 hours

hey friends welcome to cooking with Claudia today we’re making this delicious slow cooker chicken and rice recipe this is an easy weekday or weekend dinner it’s very simple and delicious let’s get started I have my slow cooker here ready to start cooking I’m going to start by pouring some rice into my slow cooker I’m using jasmine rice next I’m adding some frozen vegetables to the rice I’m also going to pour in some chicken broth some soy sauce then season with a little bit of salt to taste go ahead and mix everything together make sure you taste for salt and add more as needed once everything is mixed in we’re going to set this aside for later while we work on the chicken we’re using bone-in skin on chicken thighs we’re going to season the chicken with some spices we’re using garlic and onion powder paprika dried parsley dried oregano dried thyme salt and black pepper make sure you mix all your spices together very well then season both sides of the chicken thighs once the chicken is very well seasoned we’re going to Brown them a little bit before they go in the slow cooker I heated My Pan and oil over medium high I’m adding in the chicken then we’re going to sear the chicken for two or three minutes on each side we want them to develop this brown crust which will add a nice flavor to the meal once the chicken has browned up on both sides we’re going to add them to the slow cooker good foreign [Music] we’re going to saute some sliced onions once the onions have caramelized a little toss in some minced garlic and saute for 30 seconds to release its flavor then you’re going to add the caramelized onion and garlic to the slow cooker mix the onions in a little then you’re going to place the lid on and let this cook on high for four hours after about three hours of cooking I like to go in and toss the rice around a little since a slow cooker isn’t really a rice cooker some parts of the rice might cook faster than some other parts so fluffing in the rice will help with uneven cooking here is the rice and chicken when done slow cooking this meal will make your home smell so good this is such an easy week day or weekend dinner so delicious and comforting the rice came out very soft and the chicken is so tender it falls right off the bone if you guys would like to make this slow cooker chicken and rice recipe check the description box I have all the ingredients and measurements there [Music] foreign

This is a really cool coincidence I have created my own recipe by experimenting by taste trial and error and I’ve ended with nearly the exact same ingredients over time without a crock pot. I’m about to try it with a crock pot.

DON'T FOLLOW THE RECIPE – mine was dry and burnt! use 3 cups broth, not 2…… and only cook for 2 hrs, not 4.

I made this today and it’s a great recipe! Easy and delicious
The ratio of rice to water is incorrect. My rice was still dry by the third hour and I had to add another cup of broth to this. Also, the rice ended up being mushy. I was sadly very disappointed – and I had followed the exact directions.

Looks good although I would add butter to the rice and a bit more broth. With about 15 minutes left cooking, I would throw in mushrooms
Didn't like it…. A complete mosh of conflicting flavours and just doesn't work…. Forget the onions at the end, sweetcorn is debatable….. Paprika does not mix with well with thyme, parsley or oregano….. Keep it simple….
