Thought I’d be able to finger clip a leaf off that looked unhealthy but ended up snagging off a chunk of the stem. Anything I should do?
I've literally done something similar successfully hundreds of times, but this went different obviously.

You can try to wrap it back up tightly with tape. Wait 10 or so days, then remove.
May or may not work, but it’s worked for me the few times I’ve tried, either for an accident just like this, or for hail damaged branches.

I did something similar recently. After a week later I started seeing new growth and tiny leaves around the area I didn’t cleanly clip off with my fingers.

Should heal just fine on its own. Don’t worry about it and just keep it watered.
