my grandmother and my husband’s grandmother are both avid recipe collectors and one of my favorite things to do is to browse through their library of all handwritten recipes and cookbooks I love it so much so when I came across with this recipe for pancake akise bingo we got action honey so today on Davidson cook we are making these fluffy lemon pound cake cookies that taste just like bell cake it’s crazy y’all ready let’s go okay the first thing we’re gonna do is add our flour into a large bowl they’re gonna add in some baking powder and a little bit of salt we’re gonna whisk this around make sure you whisk it around you don’t want to have those little pockets of light baking baking powder and salt okay now I have my little lemon here I’m gonna zest it right into my dry ingredients and it was starting to smell so good I love the smell of lemon with my favorite scent in the world all right so go ahead and act that lemon zest in there I’m gonna whisk this around to get that combined there’s Ethan sent hi he loves it when I record video so much my cutie all right so our dry ingredients I’m for our wet ingredients there’s our sugar going in because pound cake has a lot of sugar all right and they’re gonna add in some softened butter always use unsalted butter always and all my recipes always unsalted and there’s my butter-flavored shortening the butter flavor shorten is gonna get the bottles nice and golden and crisp I love what shortening does to cookies the texture so good okay I’m gonna mix this around just until it’s all creamy and stuff and looking like this right to her and then we’re gonna add in our eggs where’s the eggs and they are one at a time boom and mix it up in there but you throw him in there mix this on up until it is creamy just all right that’s great I’m gonna add in some lemon extract and then I’m gonna add in some vanilla I was get so nervous pouring this in because it always comes out so fast that was some vanilla extract just go ahead and mix that in there and that was time for some fresh lemon juice we’re gonna just pop him into my lo juicer here and just squeeze out all of that luscious luscious lemon juice just like that I like doing that’s kind of fun I’m gonna mix this on up get that combined and now I’m going to add my dry ingredients into my wet ingredients and just kind of stir it up until it is oh yeah I forgot the buttermilk duh like really wanna how you forget buttermilk girl okay there’s my buttermilk going in there and start that owned up until it’s combined let me tell you guys this dough is a pain pain and but you know what to work with it’s really really sticky it’s really really soft it’s really like a thick cake batter so you have to chill it you have to one hour until it’s firm don’t do this without chilling it you know just gotta just just deal with that still with it okay so once it has chill that don’t will firm up a little bit it’ll make it a little bit easier but it will you probably will cus a few times okay but do not add more flour in it because this is gonna give us that fluffy cakey texture you know we’re gonna bake it 350 for about 10 to 12 minutes when it comes out let it sit in the pan for just a little bit it’ll finish cooking as it cools off in the pan and then place them on that cooling rack to finish cooling completely the tops will not get very Brown at all but the bottoms will be nice and golden so be careful not to over bake it don’t do that cuz ooh they’ll be all dry and they won’t be fluffy okay while they’re cooling off let’s make our glaze I have some powdered sugar in a bowl I’m gonna add in just enough lemon juice to get this to where I can brush it on okay you don’t want to use lemon juice you can use some milk because this glaze is very very tart and sweet okay so yeah get that in my I’m gonna brush my little cookies working in small batches because this glaze hardens up pretty quickly okay so you can work in small batches brush them and then sprinkle on that zest and guess what honey you Don you’re done fluffy pound cake cookies look at that inside texture you guys like cake it really is just like cake I love it so much and it’s just so good I hope you guys enjoy this video don’t forget to subscribe hit that notification bill so you’ll know when I post me recipes y’all be like Monique you still doing videos I didn’t know yes alright thank you guys so much for watching later [Music]

  1. I would leave it for about two hours. Also, put some “baking flour spray” in the scoop, it will be easier to place on baking sheet.

  10. Idk what i did wrong? I followed step by step. My cookies came out flat😢 but they was still delicious 😋 just reminded me of some sugar cookies that taste like lemon. Well this was my 1st trial & error. I'm try it again soon.

  13. I don't have butter flavor shortening, but I do have reg shortening. Will that throw off the flavor.. Or use extra butter??
