Moroccan cod with raisins & honey

Ingredients & recipe:
2 pounds cod
2 pounds yellow onions
1 cup black & yellow raisins
3 cinnamon sticks
For fish marinade:
3 garlic cloves minced
1/2tsp ground ginger
1/4tsp black pepper
1/4tsp ground turmeric
1/2tsp salt
50ml olive oil
Parsley bouquet
Put some saffron pistils in 250ml boiling water, add half saffron to the marinade.
Mix, marinate the fish for at least 2 hours.
In a warm pan or tagine, add oil, onion, 1/8tsp black pepper, 1/4tsp ginger, 3 cinnamon sticks, 1/4tsp salt, and remaining saffron in water & parsley. Put raisins in the middle, add 1/4tsp ground cinnamon.
Add fish and the marinade, cover, cook for 45min or until the sauce is thick onion & fish are tender, add 4tbp honey
Add roasted or fried almonds
