My macros got bumped up a bit this past week and I decided to take a break from rice based lunches. Pretty simple: Two boxes of Barilla red lentil penne, a medium sized zucchini, one can of tomatoes, and a pound of Italian style turkey sausage. I cooked the pasta a bit longer than the package says because the lentil stuff tends to come out really al dente and I like it a little softer. Browned the sausage in one pan and roasted the zucchini and about a cup of diced onion in another pan. Added the tomato sauce to the zucchini and let it come to a boil. Then reduced heat and let it simmer together about 20 minutes. Portioned everything into containers and into the fridge for the week.

    nice! Glad to see pulse pasta here. Yumm, but I wouldn’t have been able to keep some feta out off that, haha. Maybe even olives… righto, hungry now.
