    Looks like you’re overcooking them. The juices inside the casing are boiling while it’s shrinking, causing pressure to build up until the skin ruptures and then this happens. If you grill them indirectly to about 135F, then direct to get a sear, and off at about 155F and let rest, the brats will retain their juices and stay properly homogenized, instead of leaking out everywhere.
