Got some black rice. Any recipes I can use? Heard it is good for risotto?

    I don’t love it, but I had it often cold (obviously cooked!), with shrimps and grated zucchini sautéed altogether:)

    Black rice is not good for risotto usually

    More for cold rice salads

    Normally you use it with seafood, I don’t necessarily agree with the previous comments that say it’s good only in the cold version though

    Once I had it with taleggio in some mountain restaurant (risotto riso venere e taleggio), it was quite good.

    My advice is to use pressure cooker if you want to use it for risotto tho, otherwise it takes a lot of time to soften enough.

    Not suitable for risotto at all – and not particularly Italian either – but you can make Italian inspired dishes with it.
