I have been working through the different components of Ramen and figured it was time to try making some noodles. I do not have a pasta machine so I did everything by hand and cut the noodles with a sharp knife. Needless to say I have an Atlas 150 on the way to make a smaller more consistent noodle. Texture and spring was very good. I went a little crazy with toppings but had some things in the fridge that needed to get used up.
Broth: 50/50 homemade chicken stock and dashi
Tare: 20 grams tahini, 25 grams soy sauce
Noodles: Ramen lords Tokyo style noodle – homemade
Toppings: jelly egg, marinated beef(sake, mirin, soy sauce, ginger) fried tofu, mixed veggies, nori, green onion
Aroma oil: Homemade scallion oil, chili oil
