    Please post all of your recipes!

    We recently added a rule (#6) requiring either a recipe or list of ingredients, since it is so often requested. If you wouldn’t mind adding that we’d appreciate it!

    Recipes –

    Chicken wraps, roast chicken with garlic, lemon, olive oil , rosemary. Roast sweet potatoes at the same time. Strip the chicken, make an assembly line, in these wraps I had avocado, red bell pepper, red onion, shredded cheese, spinach, rocket & butterleaf lettuce & kewpie mayo. Assemble & wrap with Saran wrap.

    The golden gaytime brownie came out of a packet, I just added butter & eggs.

    Streaky Bacon render
    Onion
    Garlic
    Carrot
    Celery
    Seasoning
    Tomato paste
    1/4 cup red wine
    Mince

    Passata
    Chicken stock
    Cream
    Broken lasagne sheets

    Ricotta balls –
    Ricotta
    Grana Padano (or Parmesan)
    Grated tasty cheese
    mozzarella

    I use like a Dutch oven to make mine.

    First chop bacon & render the fat out of the bacon on high with a little bit of olive oil. You want the bacon crispy & lots of brown stuff on the bottom of the pan. Then make soffrito which is diced onion, carrot & celery. I also add chopped garlic at this stage. Turn the heat down & sauté the soffrito in the bacon fat, lifting the brown stuff off the bottom gradually. As your onions begin to become translucent, add celery salt & dried Italian herbs. Add tomato paste, turning the heat up again. Add a 1/4 cup of red wine, cooking making sure the alcohol all cooks out which is when you can’t smell the alcohol anymore.

    Brown your mince, it doesn’t all have to be cooked thru, add your tomato sauce, I use passata with basil. Then add about a litre of chicken stock. Let that simmer for about 5 minutes & turn the heat down & then add about 1 cup of cream. keep the heat low from now on & gentle combine the sauce. Taste & add seasonings if required. After about 10 minutes add broken lasagne sheets (I like san remo large instant sheets) & put the lid on so it all kind of steams.

    Then make your ricotta balls, just put ricotta, cut up mozzarella, Parmesan & grated cheese in a bowl with cracked black pepper. Roll them into balls & place on top of the lasagne soup once the pasta has cooked thru a bit more. If you want some crispiness to your ricotta balls you can put in the oven with the lid off but I prefer to just have the lid on & let it all get melty & delicious.

    Love the wrap idea. Do you heat them when you’re ready to eat? What do you do to keep the tortilla from getting soggy?
