Yesterday I posted about smoking for the first time ever. I chose to make an 8 pound Boston butt for some pulled pork. Was pretty nervous going into it cause I was having guests over and I didn’t want to serve something terrible.
First step was rubbing the butt down with Kinder’s Brown Sugar rub and letting it sit in my fridge for about 8 hours. Woke up at 6 am the next morning and fired up my pellet smoker and set it to 250 degrees. About three hours in I started spritzing it with apple juice once every hour.
It hit 165 internal temp at about 12:30 so I pulled it off, placed it in a pan and wrapped it in foil with a couple pads of butter and an apple juice/beer mixture. I cranked the temp up to 300 degrees and put it back in.
I left the house at about 2 and set the target internal temp to 205 degrees. I came back home at 4 and did a probe check and it was like poking butter! I placed it in a cooler for about an hour to rest.
After resting it I tried to remove the butt from the pan but it just fell apart in my hands so I just shredded it right there in its juices. Now I’ve had good pulled pork from other places and I know this might be partially biased but it was the best damn pulled pork I have ever eaten. The only thing I would change is maybe throwing on a little more seasoning before wrapping it for good measure and using a slightly bigger pan.
Next smoking project will be a brisket! Seems like a huge next step but I’ve got my confidence up pretty high and I think I’m ready for the overnight long process!
