brazed oxtails with white rice this is another absolutely Elite meal and it’s super easy and simple onion carrot celery I forgot garlic I don’t know how I’m using a food grad charcoal seasoning today which is really important for this it gives it a really distinct color I’m searing my oxtails all over in duck fat in my Dutch oven when they’re nice and colored I pull them out and I go in with my vegetables and these also get a really deep deep color and it’s it’s really interesting with this seasoning today tomato paste obviously don’t forget garlic red wine W sauce and enough beef stock to almost cover them and I simmered those for 4 hours you could also optionally put them in an oven at 350 covered in your Dutch oven you know whatever you want to do man comes out absolutely banging and I find with oxtails the meat is super tender okay it’s really fatty and you don’t even this gravy is thick as hell man there’s a lot of fat in there but I find that pulling the meat off the oxtails it’s actually really difficult first of all the bone is shaped really awkwardly and on some of those like pieces where it’s separated it’s stuck onto the bone like you would need to take it off with a knife but this is absolutely delicious and let me know if you try it
